Fixed it by going into my TV Picture Advanced Settings and changing the Picture Mode from 16:9 to Full. Always had it on 16:9 even before i got my Xbox One and all my games have been fine. Only Skyrim SE decides to cut corners. Skyrim on my 360 is fine on 16:9 though. Unfortunately my TV doesn't have an option to go full screen while using HDMI.
